What’s the quickest way to eat a cupcake? In a cookie form of course!
Welcome to another cupcake hack! Today I’m going to show you the easiest way to make cookies and in any flavor you want. All you need is a box of cake mix.
I have made cake mix cookies before, but I could not find a recipe where the cookie was dense instead of fluffy. Until a few months ago, I found Danielle’s recipe on her blog Live Well Bake Often. You could make close to 30 cookies depending on how you portion them out for baking. Because I cannot eat 30 cookies by myself, I cut down the recipe so I could make a few.
Ingredients for 5-6 cookies:
1 ½ cup of cake mix (Your choice! Red velvet, lemon, chocolate, etc.)
1 tbsp and 1 tsp of oil (I used canola)
Add-ins: chocolate chips, powdered sugar, nuts, etc.
Preheat your oven to 350 degrees (Fahrenheit). Then add the cake mix, oil, and egg to a bowl and mix. The dough will be sticky, and you could refrigerate it for about 30 minutes to make it easier to work with. Evenly scoop your dough onto a baking sheet with cooking spray or lined with parchment paper. Now is a great time to add chocolate chips, nuts, or roll the dough in powdered sugar to make crinkle cookies. If you want to have a drizzle (icing sugar plus milk) on your cookies, I suggest waiting till the cookies are done. Then bake for 10 minutes and let them cool. And there you have it! The easiest cookie recipe you will ever make.
And now for the best part… the taste test!
When you bite into the cookie, there is a satisfying crust to it. Then there is a gooey center that almost melts on your taste buds. And the white chocolate chips add just enough sweetness to the cookie.
If you love lemon cake, I highly recommend doing this recipe with lemon cake mix! Especially with lemon icing or drizzle.
After making these, it may be difficult to stop eating a ton of cookies!
