Remember those cinnamon roll cupcakes I talked about in my welcome blog? Well, here is a little story about them.
It was a normal Friday evening when I was preparing desserts to be delivered in the morning. The kitchen was a mess after making loaves of banana bread and batches of red velvet cookies. In this point of the night, it was almost midnight and everyone in the house was in bed.
Okay, I thought, just the cupcakes and I’ll make the icing in the morning. I poured all the ingredients into a mixing bowl while listening to the radio talk about random relationship advice. Once I finished doubling the cake batter, I poured it into cupcake liners and added my cinnamon-sugar swirl. They went into the oven and I set the timer.
Some time passed and I finished boxing some of the banana bread and cookies. I looked up at the timer and there was thirty minutes left. I thought I should check on the cupcakes because thirty minutes (yes, you read that correctly) had already went by. I opened the oven door to a deep shade of brown on top of the cupcakes.
And honestly for the longest time I couldn’t figure out why they turned out that way. I still had enough ingredients for another batch, so I washed the dishes and tried again. This time I peeked in the oven after twenty minutes then took them out. They were light in color! But… hard as a rock. Ouch. Now it was 2 a.m. and I needed to be up at 6 a.m. to make the icing.
What was I doing wrong? I was incredibly frustrated as I retrieved the recipe on my phone. It was then that I noticed I read the wrong time. This entire time I thought the cupcakes would take an hour! Ten to twelve minutes said the recipe. Huge face palm! I made another batch and jumped into bed around 3:30 a.m.
Luckily for me, I got great reviews on those cupcakes.
The lesson for today is to remember to read the directions folks.
And don’t make cupcakes sleep deprived.
